So I had another big globe artichoke because Safeway was having a buy-one-get-one-free deal. These things are huge. Last week I made one artichoke into a pasta dish. This week I used my second artichoke and made it into a salad. Again, I used the same technique of cleaning up the artichoke and getting to the heart, then thinly slicing them using a mandoline and eating it fresh. The slight crunchiness of the artichoke reminded me of green papaya, so I made a salad similar to many I tried in Vietnam. Add some shrimp and this is a refreshing and seasonal dish with a Vietnamese flair. So simple and tasty. It makes me feel like eating fresh artichoke all the time without the time spent steaming or boiling. Enjoy!
