I finally got around to making a Panang curry dish. I first tried this at a dinner at my friend Jessie's place and just fell in love with this particular style of curry. Jessie made it with crab, which was delicious. But it's not crab season, so I made the curry with chicken and kabocha squash. (The kabocha squash actually isn't in season either, but I found one at my local Safeway from Mexico and I just felt it would be a nice ingredient for this curry, and it was!) It may feel hot to eat curry, but it's actually getting a bit cold around here so the evenings are nice for a dish like this. If it's too hot where you are, then archive this recipe for the fall!
